This whisky is Dr Bill's attempt to bottle the magic of sunset, with its endless horizon of reds, oranges and purples. The Lasanta begins with their giraffe-high stills, which yield a deliciously delicate and fruity spirit. Next, they mature it in bourbon and sherry casks for 12 years, transforming it into a mouth-watering odyssey bursting with rich spiciness and sun-drenched sweetness. A fresh-faced, zesty whisky with a natural golden amber colour direct from the cask and as invigorating as the Orkney breeze. Fresh, clean and floral on the nose, with heathered honey and a touch of citrus. Sweet and spicy on the palate, with toasty notes of burnt orange, jasmine and fruitcake. A long finish with peppery spice, woody notes and orange zest, and the subtle, aromatic kick of smoke that you only get from Orkney heathered peat.

This is a wonderfully rich and complex single malt. Opening with rich and spicy aromas of crème brulee, heather honey and crumbled cinnamon, intensely fruity notes follow - fresh pineapple dressed with a scattering of sun-kissed lemon zest. There's a hint of freshly-baked sponge cake too, warm from the oven, and you'll find cinnamon again, but toasted shards this time. Citrus and vanilla notes linger in the aromatic waves of peat smoke.
